This Easy Homemade Pumpkin Spice Cold Brew Concentrate is smooth, spiced just right, and saves you a trip to the coffee shop. It’s a simple, no-fuss recipe that delivers warm, cozy flavor without any artificial ingredients.

  • 1 cup (85 g) coarsely ground coffee (medium roast recommended)
  • 4 cups (960 ml) filtered water
  • 2 teaspoons ground cinnamon (Ceylon or cassia)
  • 1 teaspoon ground nutmeg
  • 1 teaspoon ground ginger
  • ½ teaspoon ground cloves
  • 1 teaspoon vanilla extract (optional)
  • Sweetener of choice, to taste (optional)

Instructions

  1. In a large jar or pitcher (at least 6-cup capacity), combine the coarsely ground coffee, cinnamon, nutmeg, ginger, and cloves. Stir with a dry spoon to distribute the spices evenly.
  2. Pour the filtered water over the coffee and spice mixture. Stir gently to saturate all the grounds. If using vanilla extract, stir it in now.
  3. Cover the jar and let it steep at room temperature for 12 to 24 hours. For a balanced flavor, steep for about 18 hours.
  4. After steeping, place a fine-mesh strainer over a bowl or large measuring cup. Pour the coffee mixture through the strainer. If using cheesecloth or a nut milk bag, squeeze out the last bit of liquid.
  5. Transfer the strained cold brew concentrate to a clean jar or bottle with a tight-fitting lid. Store in the refrigerator for up to two weeks.
  6. To serve, fill a glass with ice, add about ½ cup (120 ml) of the concentrate, and top with ½ cup (120 ml) of water, milk, or milk alternative. Stir and enjoy. Adjust the ratio to taste.

Notes

The spice sediment will settle at the bottom of the jar as it sits. Give the jar a gentle shake before pouring to redistribute, or pour carefully to leave sediment behind. For a cleaner cup, strain twice. The flavors improve after a day or two in the fridge.
