Ingredients

Scale
  • 4 salmon fillets, skin-on, about 6 ounces (170 g) each
  • 2 tablespoons honey
  • 2 tablespoons Dijon mustard
  • 2 cloves garlic, minced
  • 1/3 cup panko breadcrumbs (35 g) or gluten-free breadcrumbs
  • 1 tablespoon extra virgin olive oil
  • Zest of one lemon
  • Salt, to taste
  • Freshly ground black pepper, to taste
  • Fresh parsley (optional, for garnish)

Instructions

  1. Preheat your oven to 400°F (200°C) and line a rimmed baking sheet with parchment paper or a silicone baking mat.
  2. In a mixing bowl, whisk together honey, Dijon mustard, and minced garlic until smooth and well combined.
  3. Stir in panko breadcrumbs, olive oil, and lemon zest until the breadcrumbs are evenly coated and glossy.
  4. Pat dry the salmon fillets with paper towels and season both sides lightly with salt and freshly ground black pepper.
  5. Place the salmon fillets skin-side down on the prepared baking sheet.
  6. Evenly spread the honey garlic Dijon breadcrumb mixture over the top of each fillet, pressing lightly to adhere.
  7. Bake for 12-15 minutes, depending on thickness, until the crust is golden brown and the salmon flakes easily with a fork.
  8. Remove from oven and let rest for 2 minutes.
  9. Garnish with chopped fresh parsley if desired and serve immediately.

Notes

Pat salmon dry before seasoning to ensure a crispy crust. Use fresh garlic for best flavor. If crust browns too quickly, tent loosely with foil. Thaw frozen salmon completely before baking to avoid soggy crust. Reheat leftovers gently in a skillet with olive oil to maintain crust texture.
