A quick and delicious honey garlic salmon bowl with roasted broccoli, perfect for busy weeknights. The sticky, sweet, and savory glaze caramelizes beautifully, making this a restaurant-quality meal in about 30 minutes.

  • 4 salmon fillets (about 6 ounces each)
  • ⅓ cup honey
  • ¼ cup low-sodium soy sauce
  • 4 cloves garlic, minced
  • 2 tablespoons rice vinegar
  • 1 tablespoon sesame oil
  • 1 tablespoon fresh ginger, grated
  • 1 teaspoon cornstarch
  • 2 tablespoons cold water
  • 2 large broccoli crowns, cut into florets
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • ½ teaspoon garlic powder (optional)
  • 2 cups cooked rice (white or brown)
  • 1 tablespoon toasted sesame seeds
  • 2 green onions, sliced
  • Optional toppings: avocado slices, sriracha, lime juice

Instructions

  1. Preheat oven to 400°F (200°C). Let salmon sit at room temperature for 10 minutes. Line a sheet pan with parchment paper or foil.
  2. In a small saucepan, combine honey, soy sauce, minced garlic, rice vinegar, sesame oil, and grated ginger. Whisk over medium heat.
  3. Mix cornstarch with cold water until smooth. Pour into saucepan and whisk continuously. Simmer for 3-4 minutes until thickened. Remove from heat and set aside.
  4. Toss broccoli florets with olive oil, salt, pepper, and garlic powder. Spread in a single layer on prepared sheet pan. Roast for 15-18 minutes, flipping halfway through.
  5. Pat salmon fillets dry with paper towels. Season both sides with salt and pepper. Place in a baking dish or oven-safe skillet, skin-side down. Pour half the honey garlic sauce over the fillets.
  6. When broccoli has about 8 minutes left, put salmon in the oven. Bake at 400°F for 10-12 minutes. Switch to broil for the last 2 minutes, watching closely until glaze caramelizes.
  7. Warm the reserved sauce in the saucepan over low heat. Add a splash of water if too thick.
  8. Divide cooked rice between bowls. Top with a salmon fillet and roasted broccoli. Drizzle with warm sauce. Garnish with sesame seeds and green onions. Add optional toppings if desired.

Notes

Don’t overcook the salmon; it continues to cook after removal. Watch the broiler closely to prevent burning. Cut broccoli evenly for uniform roasting. Toast sesame seeds for enhanced flavor. Make extra sauce for other uses. Let salmon rest for 2-3 minutes before serving. Store components separately for up to 3 days. Reheat in oven at 350°F for best results. Sauce can be frozen for up to 3 months.
