Ingredients

Scale
  • 10 large eggs (room temperature)
  • 1/4 cup (60 ml) milk or cream (whole milk or half-and-half recommended)
  • 1 cup shredded cheese (cheddar, mozzarella, feta, or pepper jack; sharp cheddar recommended)
  • 1/2 cup diced vegetables (bell peppers, spinach, tomatoes, mushrooms, green onions, or mix)
  • Optional: cooked bacon bits, ham cubes, or sausage crumbles
  • 1/2 teaspoon salt
  • 1/4 teaspoon freshly ground black pepper
  • 1/4 teaspoon garlic powder
  • Pinch of smoked paprika
  • Optional fresh herbs: parsley, chives, or basil
  • Non-stick cooking spray or butter (for greasing muffin tins)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease each muffin cup generously with butter or non-stick spray.
  2. Chop vegetables and meats into small, even pieces, about 1/2 cup total per batch.
  3. In a large bowl, whisk 10 large eggs with 1/4 cup (60 ml) milk or cream until uniform and slightly frothy.
  4. Add 1/2 teaspoon salt, 1/4 teaspoon black pepper, 1/4 teaspoon garlic powder, and a pinch of smoked paprika. Stir to combine.
  5. Fold in 1 cup shredded cheese and chopped veggies and meats, mixing gently to distribute evenly.
  6. Pour the egg mixture evenly into each greased muffin cup, filling about 3/4 full.
  7. Bake for 18-22 minutes until muffins puff up and edges are golden. A toothpick inserted should come out clean.
  8. Let the egg muffin cups rest for 5 minutes before removing from the tin.
  9. Store leftovers in an airtight container in the fridge for up to 5 days. Reheat in microwave or toaster oven.

Notes

Use room temperature eggs for fluffier muffins. Grease muffin tins well to prevent sticking. Chop fillings finely for even cooking. Do not overmix eggs to avoid rubbery texture. Use toothpick test to check doneness. Muffin cups can be frozen individually wrapped for up to 2 months. Reheat gently to avoid drying out.
