These mini bagel sandwich bites are a lunchbox game-changer—sturdy, customizable, and perfect for little hands. Made with toasted mini bagels, cream cheese, deli meat, and cheese, they hold up beautifully and are ready in under 10 minutes.

  • 4 mini bagels (plain, everything, or whole wheat)
  • 4 tablespoons cream cheese, softened
  • 4 slices deli ham or turkey
  • 4 slices cheddar, mozzarella, or provolone cheese
  • 2 tablespoons butter or margarine, softened (optional, for toasting)
  • 1 teaspoon honey or maple syrup (optional, for sweet version)
  • 46 cherry tomatoes, sliced (optional)
  • 46 thin cucumber slices (optional)
  • A few small lettuce or spinach leaves (optional)

Instructions

  1. Slice each mini bagel in half horizontally. Toast in a toaster or toaster oven on medium setting until lightly golden (3-4 minutes).
  2. While bagels toast, prepare fillings: soften cream cheese if needed, slice cheese into thin strips or use cookie cutters, and cut deli meat into pieces that fit the bagel halves.
  3. Once bagels are cool enough to handle (about 1 minute), spread a thin layer of cream cheese on the bottom half of each bagel. Layer on cheese, meat, and any veggies.
  4. Top with the other half of the bagel and press down gently.
  5. Using a serrated knife, cut each assembled mini bagel into quarters (or eighths for toddlers).
  6. Place bagel bites in a lunchbox container. Add a small container of cream cheese or hummus for dipping if desired.

Notes

Toast bagels the night before to save time. Use cream cheese as ‘glue’ to hold fillings in place. Let bagels cool before assembling to prevent cream cheese from melting. For best results, cut with a serrated knife to avoid squishing. Batch prep toasted bagels for the week.
