Easy Mini Ham and Cheese Quiche Cups

These bite-sized quiche cups are perfect for quick breakfasts or casual brunches, featuring a flaky crust filled with a creamy egg custard, savory ham, and sharp cheddar cheese.

  • 1 sheet store-bought or homemade pie crust, thawed if frozen
  • 4 large eggs, room temperature
  • 1/2 cup (120 ml) whole milk or half-and-half
  • 3/4 cup (about 110 g) diced cooked ham
  • 1 cup (about 115 g) shredded sharp cheddar cheese
  • 1/4 cup finely chopped onion or shallots (optional)
  • Salt and freshly ground black pepper to taste
  • Pinch of nutmeg (optional)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Roll out the pie crust on a lightly floured surface to about 1/8 inch (3 mm) thickness. Using a round cookie cutter or a glass about 3 inches (7.5 cm) in diameter, cut out 12 circles.
  3. Gently press each dough circle into the muffin cups, covering the bottom and sides evenly without stretching the dough too thin.
  4. Place small parchment or foil squares inside each dough cup and fill with pie weights or dried beans. Bake for 7 minutes to prevent sogginess, then carefully remove weights and bake for another 3 minutes until lightly golden.
  5. In a medium bowl, whisk together 4 large eggs and 1/2 cup milk or half-and-half until smooth. Stir in salt, pepper, and a pinch of nutmeg.
  6. Divide 3/4 cup diced ham, 1 cup shredded sharp cheddar, and 1/4 cup chopped onion evenly among the crusts. Pour the egg mixture over each, filling about 3/4 full.
  7. Return the muffin tin to the oven and bake for 18-22 minutes, or until the custard is set and the tops are lightly golden. A knife inserted in the center should come out clean.
  8. Let the quiche cups cool in the pan for 5 minutes before removing carefully with a small spatula or butter knife.

Notes

Use room temperature eggs and milk for a smoother custard. Blind bake the crust to prevent sogginess. If crust edges brown too fast, cover with foil halfway through baking. Do not overfill the cups to avoid spilling. Let quiche cups rest before removing from the pan for easier handling.
