These easy ghost meringue cookies are a simple, no-bake Halloween treat made with just egg whites, sugar, and vanilla. They’re light, crisp, and perfect for kids to help make, with a naturally gluten-free and low-fat profile.

  • ¾ cup granulated sugar (150g)
  • ½ teaspoon cream of tartar
  • 1 teaspoon vanilla extract
  • ¼ cup mini chocolate chips (optional, for ghost faces)

Instructions

  1. Preheat your oven to 200°F (95°C). Line a large baking sheet with parchment paper.
  2. Separate your eggs while cold, then let the egg whites come to room temperature in your mixing bowl for about 15 minutes.
  3. Add the cream of tartar to the room-temperature egg whites. Start whipping on medium speed until frothy and bubbly, about 1-2 minutes.
  4. Add the sugar slowly, about 1 tablespoon at a time, while continuing to whip on medium-high speed.
  5. Add the vanilla extract once all the sugar is incorporated. Continue whipping on high speed until the mixture holds stiff peaks, about 5-7 minutes total.
  6. Test for doneness: Rub a tiny bit of meringue between your fingers. If it feels smooth and you can’t feel sugar granules, you’re good.
  7. Transfer the meringue to your piping bag or zip-top bag. If using a piping bag, fit it with a round tip about ½ inch wide. If using a zip-top bag, snip off one corner.
  8. Pipe ghost shapes onto the prepared baking sheet. Hold the bag straight up and squeeze out a round blob about 2 inches wide. Then pull straight up to create a little peak on top.
  9. Add faces immediately. Press two mini chocolate chips for eyes and one for a mouth.
  10. Bake for 60-75 minutes at 200°F (95°C). Do not open the oven door during baking.
  11. Turn off the oven and leave the meringues inside for another 30 minutes to cool completely.
  12. Store immediately in an airtight container at room temperature.

Room temperature eggs are essential for fluffy meringue. Clean your bowl thoroughly to remove any grease. Don’t rush adding sugar. Humidity can affect meringues; bake on a dry day.
