These no-bake mummy cheesecake bites are creamy, rich, and wrapped in white chocolate with candy eyes for a spooky but cute Halloween treat. They’re easy to make with simple ingredients and perfect for parties.

  • 16 oz cream cheese, softened
  • 1/2 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1/2 cup heavy cream
  • 2 cups white chocolate chips
  • 1 tablespoon coconut oil or vegetable shortening
  • Candy eyes

Instructions

  1. In a large mixing bowl, beat the softened cream cheese with an electric mixer until smooth and creamy, about 2 minutes. Scrape down the sides, then add the powdered sugar and vanilla extract. Beat until combined and fluffy, about 2 more minutes.
  2. In a separate bowl, whip the heavy cream until stiff peaks form, about 3-4 minutes.
  3. Gently fold the whipped cream into the cream cheese mixture using a rubber spatula until no white streaks remain.
  4. Cover the bowl with plastic wrap and refrigerate for at least 2 hours, or up to overnight.
  5. Once the mixture is firm, use a cookie scoop or tablespoon to portion out the cheesecake mixture. Roll each portion into a smooth ball between your palms. Place on a parchment-lined baking sheet. You should get about 20-24 balls.
  6. Freeze the baking sheet for at least 30 minutes until the balls are firm to the touch.
  7. While the balls are freezing, melt the white chocolate chips with the coconut oil in the microwave in 30-second intervals, stirring between each, or use a double boiler. Be careful not to overheat.
  8. Working with one ball at a time, use two forks to dip each cheesecake ball into the melted white chocolate. Let excess drip off, then place back on the parchment-lined baking sheet.
  9. While the chocolate is still wet, press two candy eyes onto each mummy bite.
  10. Transfer any remaining melted white chocolate to a small piping bag or zip-top bag with a tiny corner snipped off. Drizzle the chocolate back and forth over each mummy to create the ‘bandage’ effect.
  11. Refrigerate the finished mummy bites for about 15-20 minutes to let the chocolate fully harden. Serve chilled.

Notes

Make sure cream cheese is at room temperature for smooth filling. Don’t skip the chilling steps. White chocolate burns easily, so melt slowly. Work in batches when dipping to keep balls cold.
