  • 1 tablespoon toasted sesame oil
  • 1 tablespoon rice vinegar
  • 1 tablespoon brown sugar or honey
  • Green onions, thinly sliced, for garnish
  • Toasted sesame seeds, for garnish
  • Optional vegetables: shredded carrots, thinly sliced bell peppers, baby spinach
  • 1 tablespoon neutral oil (vegetable or canola) for cooking

Instructions

  1. Prepare the rice: If you don’t have leftover rice, cook 1 cup (185g) of jasmine or long-grain rice according to package instructions. Let it cool slightly to prevent clumping (about 20 minutes).
  2. Mix the sauce: In a small bowl, whisk together 3 tablespoons soy sauce, 1 tablespoon toasted sesame oil, 1 tablespoon rice vinegar, 1 tablespoon brown sugar or honey, 1 teaspoon freshly grated ginger, and 1 minced garlic clove. Set aside.
  3. Cook the ground beef: Heat 1 tablespoon of neutral oil in a large skillet over medium-high heat. Add ground beef, breaking it up with a spatula. Cook until browned and no longer pink, about 6-8 minutes. Drain excess fat if necessary.
  4. Add aromatics: Toss in the remaining minced garlic (1 clove) and grated ginger (1 teaspoon). Stir and cook for another minute until fragrant but not burnt.
  5. Add vegetables (optional): Stir in shredded carrots or thinly sliced bell peppers if using. Cook for 2-3 minutes until just tender.
  6. Pour in the sauce: Add the prepared sesame ginger sauce to the pan. Stir well to coat the beef and veggies. Let it simmer for 2 minutes so the flavors meld and the sauce thickens slightly.
  7. Add the rice: Fold in cooked rice, breaking up any clumps. Stir everything together, ensuring every grain is coated in the sauce. Cook for another 2-3 minutes to heat through.
  8. Finish and garnish: Remove from heat. Sprinkle with sliced green onions and toasted sesame seeds before serving.

Notes

Use day-old rice for best texture to avoid mushiness. Toast sesame seeds before garnishing for enhanced flavor. If sauce thickens too much, add a splash of water or broth to loosen. For gluten-free, substitute soy sauce with tamari. Ground turkey or chicken can be used as a leaner protein alternative. For vegan, use crumbled tofu or tempeh and plant-based sauce alternatives.
