Creamy, protein-packed overnight oats with mashed banana and peanut butter that come together in just 5 minutes. Perfect for busy mornings, this no-cook breakfast is naturally sweetened and keeps you full for hours.

Ingredients

Scale
  • ½ cup (50g) rolled oats
  • ½ cup (120ml) milk of choice (whole milk recommended)
  • ¼ cup (60g) plain Greek yogurt
  • 1 medium ripe banana (with brown spots)
  • 2 tablespoons (32g) natural peanut butter (no added sugar)
  • 1 scoop (about 30g) vanilla protein powder (whey or plant-based)
  • 1 tablespoon (15ml) honey or maple syrup (optional)
  • 1 tablespoon chia seeds (optional)
  • Pinch of salt
  • For topping (optional): extra peanut butter drizzle, sliced banana, dark chocolate chips, chopped peanuts, cinnamon sprinkle

Instructions

  1. Mash the ripe banana in a small bowl with a fork until mostly smooth with a few tiny lumps (consistency of baby food).
  2. In a mason jar or container with a tight-fitting lid, add the mashed banana, milk, Greek yogurt, peanut butter, honey or maple syrup (if using), and a pinch of salt. Shake vigorously for about 15 seconds until the peanut butter is fully incorporated.
  3. Add the protein powder to the wet mixture in the jar and shake again for another 10 seconds to prevent clumps.
  4. Add the rolled oats and chia seeds (if using). Stir with a spoon until everything is evenly combined, ensuring no dry oats remain at the bottom.
  5. Seal the jar tightly and refrigerate overnight, or for at least 6-8 hours.
  6. In the morning, stir the oats well. If too thick, add a splash of milk to loosen. Top with desired toppings (e.g., extra peanut butter drizzle, sliced banana, dark chocolate chips, chopped peanuts, cinnamon). Eat cold or microwave for 30-45 seconds if preferred.

Notes

Use a very ripe banana with brown spots for natural sweetness. Mash the banana first for even distribution. Mix protein powder with liquid before adding oats to avoid clumps. Let oats rest for at least 6-8 hours for best texture. Add toppings fresh in the morning to prevent browning or hardening. Oats keep in the fridge for up to 4 days; day 2 is the sweetest spot. For a shortcut, use quick oats and let sit for 30 minutes at room temperature.
