  • ¼ cup (50 g) granulated sugar
  • ½ cup (115 g) unsalted butter, chilled and diced
  • ⅛ tsp salt
  • 23 tbsp cold water
  • 8 oz (225 g) cream cheese, softened
  • ½ cup (60 g) powdered sugar
  • 1 tsp vanilla extract
  • 2 tbsp heavy cream
  • 1 cup fresh strawberries, sliced
  • 1 cup fresh blueberries
  • ½ cup fresh raspberries (optional)
  • Star-shaped dough cutouts from leftover crust

Instructions

  1. In a large bowl, whisk together flour, sugar, and salt. Add chilled, diced butter and work it into the flour until mixture resembles coarse crumbs with pea-sized bits.
  2. Gradually add cold water, mixing gently until dough just comes together. Avoid overmixing. Wrap dough in plastic wrap and chill for at least 30 minutes.
  3. Preheat oven to 350°F (175°C).
  4. On a floured surface, roll dough into a 12-inch circle about ¼ inch thick. Transfer to a parchment-lined pizza pan and trim edges. Reserve some dough for star cutouts.
  5. In a medium bowl, beat softened cream cheese with powdered sugar and vanilla extract until smooth. Whip heavy cream until slightly fluffy and fold into cream cheese mixture.
  6. Bake crust alone for 15-18 minutes until light golden. Remove and cool completely.
  7. Roll out reserved dough and cut star shapes using a cookie cutter. Bake stars for 8-10 minutes until golden and cool.
  8. Spread cream cheese layer evenly over cooled crust. Arrange strawberries and blueberries in stripes to mimic the American flag. Place baked star cutouts on the blue section or scatter them. Add raspberries if using.
  9. Refrigerate assembled fruit pizza for at least 30 minutes before serving. Bring out 15 minutes before eating to soften slightly.

Notes

Keep butter cold until baking to maintain a flaky crust. Bake crust fully and cool completely before adding cream cheese layer to prevent sogginess. Dry fruit if very juicy. Star cutouts bake faster; watch closely to avoid burning. Can substitute almond flour for gluten-free crust or use dairy-free cream cheese and coconut cream for dairy-free version.
