  • 2 cups Bisquick or baking mix
  • 1 cup milk (whole preferred, 2% works, or almond/oat milk for dairy-free)
  • 1/2 cup granulated sugar
  • 1 teaspoon ground cinnamon
  • Optional: 1 teaspoon vanilla extract
  • Optional: a few tablespoons melted butter for brushing on top

Instructions

  1. Prepare the peaches: Wash, peel if desired, and slice about 5-6 medium peaches to get roughly 4 cups. Toss them in a bowl with 1/4 cup of the sugar and the cinnamon. Let sit for 10 minutes.
  2. Mix the batter: In a large bowl, combine 2 cups Bisquick, 1/4 cup sugar, and 1 teaspoon cinnamon. Stir together. Add 1 cup milk and 1 teaspoon vanilla extract if using. Mix gently until just combined.
  3. Assemble the bake: Pour the batter evenly into a greased 9×13-inch baking dish. Spoon the peach mixture evenly over the batter. Optionally, drizzle melted butter on top.
  4. Make-ahead option: Cover with plastic wrap and refrigerate overnight. Remove from fridge 15 minutes before baking.
  5. Bake: Preheat oven to 350°F (175°C). Bake uncovered for 40-45 minutes until top is golden brown and a toothpick inserted comes out clean.
