  • 2 tablespoons ground flaxseed or chia seeds (optional)
  • ¼ cup mini chocolate chips or raisins (optional)
  • A pinch of salt

Instructions

  1. Mash 2 ripe bananas in a mixing bowl with a fork or potato masher until smooth but slightly chunky (2-3 minutes).
  2. Stir in ½ cup peanut butter and 2 tablespoons honey or maple syrup if using until fully incorporated and creamy (about 2 minutes). Add a teaspoon of water or milk if mixture is too dry.
  3. Add 1 teaspoon vanilla extract and a pinch of salt; stir well to combine.
  4. Mix in 1 ½ cups rolled oats and 2 tablespoons ground flaxseed or chia seeds if using. Stir until oats are evenly coated and mixture is sticky but manageable (about 3 minutes). Adjust oats or peanut butter if mixture is too wet or dry.
  5. Fold in ¼ cup mini chocolate chips or raisins if desired.
  6. Scoop about 1 tablespoon of mixture and roll between palms to form balls. Dampen hands with water if mixture sticks. Place balls on a baking sheet or plate lined with parchment paper.
  7. Chill energy balls in the refrigerator for at least 30 minutes to firm up.
