  • 1 teaspoon kosher salt
  • 1/2 teaspoon freshly ground black pepper
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon smoked paprika
  • 1/4 cup crumbled feta cheese (optional)
  • Fresh parsley or chives, chopped for garnish
  • Optional add-ins: cooked sausage or bacon bits, spinach leaves

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a large bowl, toss the bell peppers, cherry tomatoes, red onion, and zucchini with olive oil, kosher salt, black pepper, garlic powder, and smoked paprika until evenly coated.
  3. Spread the vegetables in a single layer on a large rimmed baking sheet, avoiding overcrowding.
  4. Roast the vegetables for 15 minutes, stirring halfway through to ensure even browning.
  5. Remove the pan from the oven and create four small wells in the roasted vegetables.
  6. Crack one egg into each well, spacing them evenly apart.
  7. Return the sheet pan to the oven and bake for 8-12 minutes, depending on desired yolk firmness. Start checking at 8 minutes.
  8. Optional: Sprinkle crumbled feta cheese over the eggs and vegetables during the last 2 minutes of baking.
  9. Remove from oven and garnish with chopped fresh parsley or chives.
