Ingredients

Scale
  • 12 large eggs (room temperature preferred)
  • 1/3 cup mayonnaise (Duke’s or Hellmann’s recommended)
  • 1 tablespoon yellow mustard
  • 1 teaspoon white vinegar
  • 1/4 teaspoon salt (plus more for boiling water)
  • 1/8 teaspoon black pepper (freshly ground preferred)
  • 2 tablespoons everything bagel seasoning (divided: 1 tbsp for filling, 1 tbsp for garnish)
  • Optional: 1/4 teaspoon smoked paprika
  • 2 tablespoons sour cream or Greek yogurt (for spider web)
  • 1 small piping bag or zip-top bag (for spider web)

Instructions

  1. Place 12 eggs in a single layer in a medium saucepan. Cover with cold water by about 1 inch. Add a generous pinch of salt. Bring to a rolling boil over high heat, then cover, turn off heat, and let sit for exactly 12 minutes.
  2. While eggs cook, prepare a large bowl of ice water. Transfer eggs to ice bath using a slotted spoon and let sit for at least 10 minutes.
  3. Peel eggs under running water, starting from the wide end. Pat dry.
  4. Slice each egg in half lengthwise. Remove yolks to a mixing bowl. Arrange egg white halves on a serving platter, cut side up.
  5. To the yolks, add mayonnaise, yellow mustard, white vinegar, salt, pepper, and 1 tablespoon everything bagel seasoning. Mash with a fork until smooth and creamy.
  6. Spoon filling into a piping bag or zip-top bag. Snip off a 1/2-inch corner. Pipe filling into each egg white half, mounding slightly above the edge.
  7. In a small bowl, stir sour cream or Greek yogurt until smooth. Spoon into a small piping bag or zip-top bag and snip off a tiny corner. Pipe a small dot in the center of each filled egg, then a spiral outward. Use a toothpick to drag lines from center outward through the spiral to create a web effect. Wipe toothpick clean between eggs.
  8. Sprinkle remaining 1 tablespoon everything bagel seasoning over the eggs. Dust with smoked paprika if desired. Serve chilled or refrigerate until ready to serve.

Notes

Use older eggs (1-2 weeks old) for easier peeling. For best results, prepare through step 6 up to 24 hours ahead, but add spider web and seasoning just before serving. The sour cream web will absorb if left too long, and seasoning loses crunch. For dairy-free, use vegan mayo and dairy-free sour cream. For spicy version, add 1/2 teaspoon sriracha to filling.
