A fun and delicious Halloween appetizer featuring creamy guacamole sculpted into Frankenstein’s monster, topped with a cream cheese face and decorated with olive eyes, a bell pepper mouth, and tortilla chip hair.

  • 4 ripe avocados
  • 4 oz cream cheese, softened to room temperature
  • Juice of 2 limes
  • 1/2 cup finely chopped red onion
  • 1 jalapeño, seeded and minced
  • 1/2 cup fresh cilantro, finely chopped
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 medium tomato, seeded and diced
  • 1 block (8 oz) cream cheese, softened
  • 2 tablespoons milk
  • 1/4 cup black olives, sliced
  • 1 carrot stick, cut into thin strips
  • 1 small piece of red bell pepper, cut into a mouth shape
  • Blue corn tortilla chips

Instructions

  1. Prep your ingredients first. Dice red onion, mince jalapeño, chop cilantro, seed and dice tomato, and slice olives. Set aside decoration ingredients separately.
  2. Make the cream cheese spread: In a small bowl, combine the block of softened cream cheese with 2 tablespoons of milk. Mix until smooth and spreadable. Set aside.
  3. Mash the avocados: Cut avocados in half, remove pits, and scoop flesh into a large mixing bowl. Add 4 oz of softened cream cheese. Mash together until mostly smooth with some small chunks.
  4. Add the flavor: Pour in lime juice, then add chopped red onion, minced jalapeño, chopped cilantro, salt, and pepper. Stir until well combined. Taste and adjust seasoning.
  5. Fold in the tomato: Gently stir in diced tomato. Be careful not to overmix.
  6. Sculpt Frankenstein’s head: Transfer guacamole to serving platter. Using a spatula, shape into a rough rectangle or square about 6 inches wide and 4 inches tall.
  7. Add the cream cheese face: Spread prepared cream cheese mixture over the top of the guacamole rectangle, leaving a small border of green guacamole visible around the edges.
  8. Create the eyes: Place two sliced black olives in the upper portion of the cream cheese face, slightly asymmetrically.
  9. Add the mouth: Use red bell pepper piece to create a mouth shape below the eyes.
  10. Attach the bolts: Insert carrot stick strips into the sides of the guacamole head, about halfway down.
  11. Add the hair: Stick blue corn tortilla chips into the top of the guacamole head, angling them slightly upward and outward. Use about 5-7 chips.
  12. Surround with chips: Arrange additional tortilla chips around the base of the platter for dipping.
  13. Serve immediately. Best enjoyed within an hour of making.

Notes

For best results, use ripe but firm avocados. The cream cheese helps the guacamole hold its shape for sculpting. If the guacamole starts to brown while sculpting, scrape off the discolored layer before adding the cream cheese face. The cream cheese layer protects most of the guacamole from browning. For make-ahead, prepare the guacamole base up to 4 hours in advance, then add cream cheese and decorations just before serving.
