These Easy Turkey and Cheese Lunchbox Pinwheels are a quick, kid-friendly lunch solution that holds up better than sandwiches. Ready in 15 minutes, they feature a smooth cream cheese spread, deli turkey, and cheddar rolled in a flour tortilla for a perfect, portable meal.

Ingredients

Scale
  • 4 large flour tortillas (10-inch)
  • 68 ounces deli turkey slices (oven-roasted or honey-roasted)
  • 4 ounces cream cheese, softened
  • 46 slices cheddar cheese (sharp or mild)
  • 1/2 cup spinach leaves (optional)
  • Salt and pepper to taste

Instructions

  1. Soften the cream cheese: Take the cream cheese out of the fridge and let it sit on the counter for 10-15 minutes, or microwave for 10-15 seconds until spreadable but not runny.
  2. Lay out a tortilla: Place one large flour tortilla flat on a cutting board. If cold, microwave for 10 seconds to warm slightly.
  3. Spread the cream cheese: Using a spatula or butter knife, spread the softened cream cheese evenly across the entire surface of the tortilla, all the way to the edges.
  4. Layer the turkey: Place turkey slices in a single layer over the cream cheese, overlapping slightly to cover any gaps. Press down gently.
  5. Add the cheese: Lay cheddar slices on top of the turkey in a single layer. If using spinach, arrange leaves on top and press down.
  6. Season lightly: Sprinkle a tiny pinch of salt and pepper over the fillings.
  7. Roll it up: Starting from one edge, roll the tortilla tightly but gently, tucking the filling in as you go. Aim for a snug roll without squishing the fillings out the ends.
  8. Wrap and chill: Wrap the rolled tortilla tightly in plastic wrap or parchment paper. Refrigerate for at least 15 minutes (or freeze for 5 minutes if in a rush).
  9. Slice the pinwheels: Unwrap the chilled roll and slice into 1-inch pieces using a sharp serrated knife with a gentle sawing motion. You should get about 8-10 pinwheels per tortilla.
  10. Arrange and pack: Place pinwheels in a lunchbox or container. If packing for later, layer with parchment paper between layers to prevent sticking.

Notes

Let cream cheese and tortillas come to room temperature for best results. Chilling the roll before slicing is essential for clean cuts. Don’t overstuff—a thin, even layer of fillings gives the best spiral. For a flavor boost, mix 1 tablespoon ranch seasoning or everything bagel seasoning into the cream cheese. Store in an airtight container in the refrigerator for up to 4 days. Freeze rolled, unsliced logs for up to 2 months.
