Instructions

  1. In a mixing bowl, combine 1 cup BBQ sauce, 1/2 cup diced fresh peaches, 1/4 cup bourbon, 2 tablespoons brown sugar, 1 tablespoon apple cider vinegar, 1/2 teaspoon garlic powder, and 1/2 teaspoon smoked paprika. Stir well until sugar dissolves and set aside.
  2. Pat dry 4 pork chops and season both sides generously with salt and black pepper.
  3. Heat 1 tablespoon olive oil in a heavy skillet or cast-iron pan over medium-high heat until shimmering (about 3 minutes).
  4. Place pork chops in the pan without crowding and sear for about 4 minutes per side until golden brown. Add 1-2 minutes per side if chops are thicker than 1 inch.
  5. Reduce heat to medium-low and pour the bourbon peach BBQ glaze over the chops, spooning to coat evenly.
  6. Simmer the chops in the glaze for 5-7 minutes, flipping once halfway through, until the glaze thickens slightly and pork reaches an internal temperature of 145°F (63°C).
