A quick and easy spicy Buffalo chicken salad wrapped in crisp butter lettuce leaves, perfect for summer gatherings or a light, satisfying dinner.

  • 2 cups cooked chicken, shredded or diced (rotisserie chicken works great for convenience)
  • 1/3 cup hot sauce (Frank’s RedHot recommended)
  • 1/4 cup plain Greek yogurt
  • 1/4 cup blue cheese crumbles (optional)
  • 2 stalks celery, finely diced
  • 1 tablespoon fresh chives or green onions, chopped
  • 1 teaspoon garlic powder
  • Salt and freshly ground black pepper, to taste
  • 1 head butter lettuce or Bibb lettuce (leaves separated, washed, and patted dry)
  • Optional garnish: sliced radishes, shredded carrots, or thin cucumber ribbons

Instructions

  1. If not using pre-cooked chicken, poach or roast about 2 chicken breasts (about 12 oz / 340 g) until cooked through. Let cool, then shred or chop into bite-sized pieces.
  2. In a medium bowl, combine 1/3 cup hot sauce with 1/4 cup plain Greek yogurt. Whisk until smooth and creamy.
  3. Toss the shredded chicken into the hot sauce mixture, stirring gently to coat evenly without mashing the chicken.
  4. Stir in 2 diced celery stalks and 1 tablespoon chopped fresh chives or green onions.
  5. Sprinkle 1 teaspoon garlic powder and season with salt and freshly ground black pepper to taste. Mix gently again.
  6. Fold in 1/4 cup blue cheese crumbles if using.
  7. Separate whole leaves from 1 head of butter lettuce or Bibb lettuce. Rinse well under cold water and dry completely.
  8. Spoon about 2 heaping tablespoons of the Buffalo chicken salad onto the center of each lettuce leaf.
  9. Garnish with thinly sliced radishes, shredded carrots, or cucumber ribbons if desired.
  10. Serve immediately for best freshness and crunch.

Notes

Use rotisserie chicken to reduce prep time to under 10 minutes. Be gentle when mixing to keep chicken pieces chunky. Adjust hot sauce and Greek yogurt to balance spice level. Dry lettuce leaves thoroughly to avoid soggy wraps. Store chicken salad and lettuce separately if prepping ahead.
