  • 1/2 cup (90g) white chocolate chips
  • 2 tablespoons (28g) unsalted butter
  • 1 teaspoon chili powder
  • 1/2 teaspoon smoked paprika
  • 1/4 teaspoon ground cumin
  • 1/2 teaspoon salt
  • 1 teaspoon granulated sugar
  • 1 tablespoon fresh lime juice
  • Optional: 1/4 teaspoon red pepper flakes

Instructions

  1. Heat 2 tablespoons of unsalted butter in a large, heavy-bottomed pot over medium heat until melted. Add 1/2 cup (90g) of popcorn kernels and cover with a lid. Shake the pot gently every 15 seconds to prevent burning. Once popping slows to about 2 seconds between pops (about 3-4 minutes), remove the pot from heat and carefully pour the popcorn into a large heatproof bowl. (If using an air popper, pop the kernels according to manufacturer instructions.)
  2. While the popcorn is still warm, drizzle 1 tablespoon fresh lime juice over it. Sprinkle with 1 teaspoon chili powder, 1/2 teaspoon smoked paprika, 1/4 teaspoon ground cumin, 1 teaspoon granulated sugar, 1/2 teaspoon salt, and optional 1/4 teaspoon red pepper flakes. Toss thoroughly with a large spoon or your hands until the popcorn is evenly coated and fragrant.
  3. Place 1/2 cup (90g) white chocolate chips in a microwave-safe bowl. Microwave in 20-second intervals, stirring well between each, until smooth and fully melted (about 1 to 1 1/2 minutes). Alternatively, melt the chocolate in a double boiler over simmering water, stirring constantly.
  4. Line a large baking sheet with parchment paper. Pour the spiced popcorn onto the sheet, spreading it out evenly. Using a spoon or fork, drizzle the melted white chocolate over the popcorn in a zigzag pattern. Let it sit at room temperature until the chocolate hardens, about 20 minutes. For quicker setting, refrigerate for 10 minutes but avoid making the chocolate brittle.
  5. Once the white chocolate has set, gently break the popcorn into chunks. Transfer to a serving bowl and enjoy immediately, or store in an airtight container for later snacking.

Notes

Do not drizzle the white chocolate immediately after tossing with lime juice to avoid sogginess; let the popcorn settle for a few minutes first. Use short microwave bursts or a double boiler to melt white chocolate to prevent burning. Store popcorn in an airtight container at room temperature for up to 3 days; avoid refrigeration to maintain crunch.
