  • 1/2 teaspoon dried oregano or Italian seasoning
  • Salt and freshly ground black pepper, to taste
  • 1 egg, beaten (for egg wash)

Instructions

  1. Heat a small skillet over medium heat and add the chopped spinach with a splash of water or olive oil. Sauté for 2-3 minutes until wilted, then transfer to a fine mesh sieve or cheesecloth and squeeze out as much moisture as possible.
  2. In a mixing bowl, combine the softened cream cheese, minced garlic, chopped sun-dried tomatoes, sautéed spinach, shredded cheese (if using), oregano, salt, and pepper. Mix until smooth and well incorporated.
  3. On a lightly floured surface, gently roll out the thawed puff pastry to smooth any creases and make it about 12×12 inches.
  4. Evenly spread the cream cheese mixture over the puff pastry, leaving about a 1/2-inch border around the edges.
  5. Starting from one edge, carefully roll the dough into a tight log and gently press to seal the edge.
  6. Using a sharp knife or pizza cutter, slice the log into 1/2-inch thick rounds, yielding about 12-14 pinwheels.
  7. Place the pinwheels cut side up on a parchment-lined baking sheet, spaced about 1 inch apart. Brush the tops lightly with the beaten egg.
  8. Preheat oven to 400°F (200°C). Bake the pinwheels for 15-18 minutes, or until puffed and golden brown.
  9. Let the pinwheels cool for about 5 minutes before serving.
