Flavorful Strawberry Balsamic Bruschetta with Goat Cheese

A quick and easy summer snack featuring fresh strawberries macerated in balsamic vinegar and honey, served on toasted crusty bread with creamy goat cheese and fresh basil.

  • 1 cup fresh strawberries, hulled and diced
  • 2 tablespoons balsamic vinegar
  • 1 teaspoon honey
  • 1 tablespoon fresh basil leaves, thinly sliced
  • 4 ounces goat cheese, softened
  • 1 small baguette or rustic bread loaf, sliced ½ inch thick
  • Olive oil, for brushing bread
  • Pinch of salt
  • Pinch of pepper

Instructions

  1. Wash, hull, and dice 1 cup of fresh strawberries into small pieces (about ½ inch). Place them in a mixing bowl.
  2. In a small bowl, whisk together 2 tablespoons of balsamic vinegar and 1 teaspoon of honey until combined.
  3. Drizzle the balsamic mixture over the diced strawberries, add a pinch of salt and 1 tablespoon of thinly sliced fresh basil leaves. Toss gently to coat all pieces. Let macerate for 10 minutes.
  4. Slice the baguette or rustic bread into ½-inch thick pieces. Brush both sides lightly with olive oil.
  5. Toast the bread slices on a baking sheet under the broiler or in a grill pan over medium heat until golden and crisp, about 2 minutes per side. Watch closely to avoid burning.
  6. Spread about 1 tablespoon of softened goat cheese onto each toasted bread slice.
  7. Spoon the strawberry and balsamic mixture evenly over the goat cheese–topped bread slices.
  8. Garnish with whole basil leaves or a light drizzle of balsamic glaze if desired.

Notes

Use ripe but firm strawberries to avoid soggy topping. Let strawberries macerate for at least 10 minutes to deepen flavor. Toast bread until crisp but not burnt. Soften goat cheese for easier spreading by microwaving 10 seconds or mixing with a splash of cream or milk. Store strawberry mixture and toasted bread separately if making ahead.
