  • 6 cups (900g) thinly sliced Kirby cucumbers or pickling cucumbers
  • 1 medium yellow onion, thinly sliced
  • 1/4 cup (60g) kosher salt
  • 2 cups (400g) granulated sugar
  • 2 cups (480ml) white vinegar (distilled white or apple cider vinegar)
  • 1 cup (240ml) water
  • 1 tablespoon mustard seeds
  • 1 large cinnamon stick
  • 1/2 teaspoon turmeric
  • 1/4 teaspoon ground cloves
  • 1/4 teaspoon ground ginger

Instructions

  1. Slice the cucumbers and onions thinly (about 1/8 inch or 3mm) using a mandoline or sharp knife. (10 minutes)
  2. Place the sliced cucumbers and onions in a large bowl. Sprinkle kosher salt over them and toss gently to combine. Cover and let sit for about 2 hours to draw out moisture.
  3. Rinse the cucumbers and onions well under cold water to remove the salt. Drain thoroughly and pat dry with paper towels. (5-10 minutes)
  4. In a large saucepan, combine white vinegar, water, granulated sugar, mustard seeds, cinnamon stick, turmeric, ground cloves, and ground ginger. Bring to a boil over medium heat, stirring occasionally to dissolve sugar. Reduce heat and simmer for 5 minutes.
  5. Pack the drained cucumber and onion slices tightly into sterilized quart-sized glass jars, leaving about 1/2 inch headspace.
  6. Pour the hot brine over the cucumbers in the jars, ensuring vegetables are completely submerged. Leave 1/2 inch headspace at the top.
  7. Wipe jar rims clean, seal tightly with lids, and let cool to room temperature. Refrigerate once cooled.
  8. Wait at least 24 hours before tasting for best flavor; pickles improve with longer resting time.

Notes

Salting cucumbers and onions for 2 hours is crucial to keep pickles crisp. Use thin, even slices for best flavor absorption. Use distilled white or apple cider vinegar for classic tang. Refrigerate pickles as this recipe does not use canning. Flavors improve after several days in the fridge. Sterilize jars well to avoid spoilage. Variations include adding crushed red pepper flakes for heat or using natural sweeteners like honey or maple syrup.
