A quick and easy weeknight dinner featuring salmon glazed with a smoky-sweet whiskey sauce paired with creamy maple-infused sweet potato mash.

Ingredients

Scale
  • 4 salmon fillets (6 ounces / 170 grams each), skin-on or off depending on preference
  • 1/4 cup (60 ml) whiskey (smooth bourbon recommended)
  • 2 tablespoons (30 ml) soy sauce
  • 2 tablespoons (30 g) brown sugar, packed
  • 1 tablespoon (15 ml) Dijon mustard
  • 2 cloves garlic, minced
  • 1 tablespoon (15 ml) olive oil or avocado oil
  • Freshly ground black pepper to taste
  • 2 large sweet potatoes (about 1 pound / 450 grams), peeled and cubed
  • 3 tablespoons (45 ml) pure maple syrup
  • 2 tablespoons (30 g) unsalted butter, softened
  • 1/4 cup (60 ml) milk or cream (any kind, including almond or oat milk)
  • Salt and freshly ground black pepper to taste
  • Optional: a pinch of cinnamon or nutmeg

Instructions

  1. Peel and chop sweet potatoes into roughly 1-inch cubes. Place in a medium saucepan, cover with cold water, add a pinch of salt, and bring to a boil over medium-high heat. Cook until tender, about 15-20 minutes.
  2. While potatoes cook, whisk together whiskey, soy sauce, brown sugar, Dijon mustard, and minced garlic in a small bowl. Set aside.
  3. Heat 1 tablespoon oil in a skillet over medium-high heat. Season salmon fillets lightly with salt and pepper. Place skin-side down if skin-on and cook for 4-5 minutes without moving to get a crispy crust. Flip and cook for another 2-3 minutes depending on thickness.
  4. Pour whiskey glaze over salmon in the pan. Reduce heat to medium-low and let glaze simmer, spooning over fillets occasionally, until thickened and glossy, about 3-4 minutes. Watch carefully to avoid burning.
  5. Drain cooked sweet potatoes and return to pot or mixing bowl. Add butter, maple syrup, and milk or cream. Mash until smooth but creamy. Season with salt, pepper, and optional cinnamon or nutmeg. Adjust sweetness or seasoning as desired.
  6. Plate by spooning maple sweet potato mash onto plates and topping with a whiskey glazed salmon fillet. Drizzle any remaining glaze over the top.

Notes

If glaze thickens too quickly, add a splash of water or more whiskey to loosen. Sweet potato mash can be made ahead and gently reheated with a splash of milk. Avoid overcooking salmon to keep it moist. Use medium-high heat for searing and medium-low for glazing to prevent burning. Wild-caught salmon and real maple syrup are recommended for best flavor.
