Fresh Caprese Stuffed Avocados Recipe Easy 5-Minute Healthy Snack

A quick and healthy snack combining creamy avocado with fresh mozzarella, cherry tomatoes, basil, and a drizzle of balsamic glaze. Ready in about 5 minutes, perfect for light meals or appetizers.

  • 1 cup (150 g) fresh mozzarella balls (bocconcini or ciliegine), halved or quartered
  • 1 cup (150 g) cherry or grape tomatoes, halved or quartered
  • 10 fresh basil leaves, torn or chopped
  • 1 tablespoon (15 ml) extra-virgin olive oil
  • Salt to taste
  • Freshly cracked black pepper to taste
  • 2 teaspoons (10 ml) balsamic glaze (about 1 teaspoon per avocado half)
  • Optional: 1 small minced garlic clove
  • Optional: Red pepper flakes to taste
  • Optional: Toasted pine nuts for garnish

Instructions

  1. Cut two ripe avocados in half lengthwise. Gently twist to separate halves. Carefully remove the pits using a spoon or knife tip.
  2. Scoop out about 1 tablespoon (15 ml) of flesh from the center of each avocado half to create more room for the filling.
  3. In a medium mixing bowl, combine 1 cup (150 g) of fresh mozzarella balls with 1 cup (150 g) of halved cherry tomatoes.
  4. Add torn or roughly chopped basil leaves to the bowl.
  5. Drizzle 1 tablespoon (15 ml) of extra-virgin olive oil over the mixture.
  6. Add a pinch of salt and freshly cracked black pepper to taste.
  7. Toss gently to coat all ingredients evenly without mashing the tomatoes.
  8. Spoon the Caprese mixture generously into each avocado half, pressing lightly to fill the cavity.
  9. Drizzle balsamic glaze over the stuffed avocados — about 1 teaspoon (5 ml) per half.
  10. If desired, sprinkle a pinch of red pepper flakes for heat.
  11. Serve immediately, optionally garnished with extra basil leaves or toasted pine nuts.

Notes

Use ripe but firm Hass avocados for best texture. Tear basil leaves by hand to release oils and avoid bruising. Drizzle balsamic glaze sparingly to avoid overpowering flavors. To prevent avocado browning, rub flesh with lemon juice and cover tightly if prepping ahead. Optional add-ins include minced garlic, red pepper flakes, or toasted pine nuts for extra flavor and texture.
