  • 1 teaspoon sugar
  • Salt and black pepper to taste
  • 1 tablespoon fresh parsley or chives, chopped (optional)

Instructions

  1. Wash and dry 3 medium cucumbers thoroughly. Peel if preferred. Slice thinly, about 1/8 inch (3 mm) thick.
  2. Place sliced cucumbers in a mixing bowl, sprinkle with 1 teaspoon salt, and toss. Let sit for 10 minutes to draw out moisture. Gently squeeze out liquid.
  3. Thinly slice one small red onion. Chop 2 tablespoons fresh dill and, if using, 1 tablespoon parsley or chives. Mince 1 small garlic clove if desired.
  4. In a separate bowl, whisk together 1 cup sour cream, 1 tablespoon white vinegar or lemon juice, 1 teaspoon sugar, and a pinch of salt and black pepper. Adjust seasoning to taste.
  5. Add cucumbers, onion slices, and herbs to the dressing. Toss gently until evenly coated, avoiding overmixing.
  6. Cover and refrigerate for at least 30 minutes to allow flavors to meld.
  7. Before serving, stir gently and adjust salt or vinegar if needed.

Salting and draining cucumbers is key to avoid sogginess. Use fresh dill for best flavor. Dressing separately before combining keeps creaminess smooth.
