A quick and easy fresh Greek yogurt parfait layered with mixed berries, honey granola, and a drizzle of honey for a healthy and satisfying breakfast or snack.

  • 2 cups (480 ml) Greek yogurt (full-fat or low-fat)
  • 1 ½ cups (225 g) fresh berries (strawberries hulled and sliced, blueberries, raspberries)
  • 1 cup (100 g) honey granola (crunchy variety with oats, nuts, and light honey glaze)
  • 2 tbsp (30 ml) honey (raw or wildflower)
  • ½ tsp (2.5 ml) vanilla extract (optional)
  • Fresh mint leaves (for garnish)

Instructions

  1. Mix the Greek yogurt, 1 tablespoon honey, and vanilla extract in a medium bowl until smooth and slightly glossy.
  2. Rinse the berries gently under cold water and pat dry. Hull and slice the strawberries. Drain any excess moisture from juicy berries.
  3. In serving glasses or bowls, spoon about ¼ cup (60 ml) of the yogurt mixture into the bottom.
  4. Add a layer of mixed berries (about ¼ cup / 40 g), then sprinkle with 2 tablespoons (15 g) of honey granola.
  5. Repeat layering yogurt, berries, and granola until the glass is nearly full, finishing with a sprinkle of granola on top.
  6. Drizzle the remaining tablespoon of honey over the top and garnish with a small sprig of fresh mint.
  7. Serve immediately for maximum crunch or chill for up to 30 minutes for a softer granola texture.

Notes

Use thick Greek yogurt for best texture; strain regular yogurt if needed. Drain berries well to avoid sogginess. Add granola just before serving to maintain crunch. For vegan version, substitute coconut or almond yogurt and use maple syrup instead of honey.
