A quick and easy summer salad featuring smoky grilled peaches paired with creamy burrata and fresh basil, drizzled with balsamic vinegar and olive oil for a refreshing and elegant dish.

Ingredients

  • 3 ripe peaches, halved and pitted
  • 8 ounces fresh burrata cheese
  • 1/4 cup fresh basil leaves, loosely packed
  • 2 tablespoons extra virgin olive oil
  • 1 tablespoon balsamic vinegar or balsamic glaze
  • Sea salt, to taste
  • Freshly ground black pepper, to taste
  • Optional: toasted pine nuts or sliced almonds for crunch

Instructions

  1. Wash and halve the peaches, removing the pits carefully. Brush the cut sides lightly with about 1 tablespoon olive oil.
  2. Preheat grill or grill pan to medium-high heat (375–400°F).
  3. Place peaches cut-side down on the grill. Cook without moving for 3–4 minutes until grill marks appear and peaches soften.
  4. Flip peaches and grill skin side for another 2 minutes. Remove and let cool slightly.
  5. Tear or slice burrata into bite-sized pieces gently.
  6. Arrange grilled peach halves and burrata pieces on a serving platter.
  7. Scatter fresh basil leaves over the top.
  8. Drizzle remaining olive oil and balsamic vinegar evenly over the salad.
  9. Sprinkle sea salt and freshly ground black pepper to taste.
  10. If using, scatter toasted pine nuts or almonds for crunch.
  11. Let the salad rest for 5 minutes before serving to allow flavors to meld.

Notes

Use firm but ripe peaches for best grilling results. Let burrata sit at room temperature 10 minutes before serving for creaminess. Avoid overcrowding the grill pan to ensure proper caramelization. For dairy-free option, substitute burrata with vegan cashew cheese or soft tofu-based cheese. Peaches can be swapped with nectarines or apricots. Store grilled peaches and burrata separately if making ahead.
