  • 1 can (15 oz / 425 g) black beans, drained and rinsed
  • 1 cup (160 g) fresh corn kernels, or thawed frozen corn
  • 1 cup (150 g) cherry tomatoes, halved
  • 1 medium red bell pepper, finely chopped
  • ½ medium red onion, finely diced
  • 1 large ripe avocado, diced
  • ¼ cup (10 g) fresh cilantro, chopped
  • 2 tablespoons (30 ml) freshly squeezed lime juice
  • 2 tablespoons (30 ml) good quality olive oil
  • 1 teaspoon (2 g) ground cumin
  • ½ teaspoon (1 g) garlic powder
  • Salt and pepper to taste
  • 1 small jalapeño, finely minced (optional)

Instructions

  1. Prep the Veggies (10 minutes): Rinse and drain the black beans. Halve the cherry tomatoes, finely chop the red bell pepper, dice the red onion, and mince the jalapeño if using. Place all in a large mixing bowl.
  2. Cut the Avocado (3 minutes): Slice the avocado in half, remove the pit, and dice the flesh into bite-sized pieces, being careful to keep chunks intact.
  3. Add Corn (1 minute): Toss in the fresh or thawed corn kernels.
  4. Mix the Dressing (2 minutes): In a small bowl, whisk together lime juice, olive oil, cumin, garlic powder, salt, and pepper. Adjust seasoning to taste.
  5. Combine and Toss (2 minutes): Pour the dressing over the vegetable and bean mixture and gently fold together. Add the diced avocado last, folding carefully to avoid mashing.
  6. Finish with Cilantro (1 minute): Sprinkle chopped cilantro on top and give a final gentle toss.
  7. Chill Before Serving (Optional, 30 minutes): Refrigerate for at least 30 minutes to allow flavors to meld. Serve chilled or at room temperature.

Notes

Drain and rinse beans well to avoid watery salad. Use ripe but firm avocados to maintain chunk texture. Gently fold ingredients to prevent mashing avocado. Let salad rest chilled for best flavor. Adjust spice level by adding or omitting jalapeño. Add a pinch of sugar or honey if dressing tastes too sharp.
