Instructions

  1. Preheat oven to 375°F (190°C). Lightly grease a 9×13-inch baking dish with butter or nonstick spray.
  2. Peel and slice peaches. In a large bowl, toss peaches with granulated sugar, brown sugar, lemon juice, cinnamon, and a pinch of salt. Let sit for 15 minutes.
  3. In a separate bowl, whisk together flour, baking powder, salt, and optional nutmeg. Cut in cold butter using a pastry cutter or two knives until mixture resembles coarse crumbs with pea-sized butter bits.
  4. Stir in milk and vanilla extract until just combined; do not overmix.
  5. Pour peach mixture with juices into prepared baking dish. Dollop topping evenly over peaches, leaving some gaps.
