A refreshing and easy-to-make summer drink combining sweet watermelon, crisp cucumber, fresh mint, and lime juice, perfect for hot days and gatherings.

Ingredients

  • 4 cups (600g) seedless watermelon chunks, chilled
  • 1 medium cucumber (about 200g), peeled and roughly chopped
  • 1012 fresh mint leaves, washed and lightly bruised
  • Juice of 1 large lime (about 2 tablespoons or 30ml)
  • 12 tablespoons agave syrup or honey (optional, adjust to taste)
  • 2 cups (480ml) cold water
  • Ice cubes for serving

Instructions

  1. Wash and chop the watermelon into chunks, peel and roughly chop the cucumber, and gently bruise the mint leaves to release their oils. Set aside the lime juice and sweetener.
  2. In a blender, combine the watermelon chunks, cucumber pieces, and mint leaves. Pulse a few times to break up the mint, then blend on high until smooth and vibrant, about 1-2 minutes.
  3. Pour the blended mixture through a fine mesh strainer or cheesecloth into a bowl or pitcher, pressing out as much juice as possible. (Straining is optional if you prefer more pulp.)
  4. Stir in the fresh lime juice and sweetener of choice. Taste and adjust sweetness or acidity if needed. Add the cold water and stir well.
  5. Refrigerate the agua fresca for at least 30 minutes before serving to allow flavors to meld.
  6. Serve over ice cubes with a sprig of fresh mint for garnish.

Notes

Use ripe, juicy watermelon for best flavor. Lightly bruise mint leaves to release oils without shredding. Straining is optional depending on preferred texture. Adjust sweetener based on watermelon sweetness. For extra cold drinks, freeze watermelon chunks to use as ice cubes.
