  • 4 cups watermelon, cut into bite-sized cubes
  • 1 cup feta cheese, crumbled
  • 1/4 cup fresh mint leaves, roughly chopped or torn
  • 1 to 1.5 teaspoons Tajín seasoning
  • 1 tablespoon fresh lime juice
  • 1 tablespoon extra virgin olive oil (optional)
  • Pinch of sea salt, to taste
  • Freshly ground black pepper, to taste

Instructions

  1. Using a sharp knife, cut about 4 cups of seedless watermelon into 1-inch cubes.
  2. Roughly chop or tear 1/4 cup of fresh mint leaves.
  3. In a large mixing bowl, gently toss the watermelon cubes with crumbled feta.
  4. Drizzle 1 tablespoon of fresh lime juice and 1 tablespoon of extra virgin olive oil over the mixture.
  5. Sprinkle 1 to 1.5 teaspoons of Tajín seasoning evenly over the salad. Add a pinch of sea salt and freshly ground black pepper to taste.
  6. Using two large spoons, toss the salad carefully to combine everything without crushing the watermelon.
  7. Sprinkle the torn mint leaves on top and give a final gentle toss. Let the salad rest for 5 minutes if possible to allow flavors to mingle.

Notes

Use a sharp knife to cut watermelon to avoid crushing. Add feta last and toss gently to prevent it from breaking down. If salad is watery after resting, drain excess liquid before serving. Tajín seasoning can be substituted with chili powder, lime juice, and salt if unavailable. Mint can be swapped with basil or cilantro. For dairy-free, use vegan feta or firm tofu.
