A quick and refreshing summer salad combining sweet watermelon, crumbly feta, and a zingy mint-lime dressing for a perfect balance of flavors.

  • 4 cups watermelon, cubed (seedless, ripe)
  • 1 cup feta cheese, crumbled (preferably Greek feta)
  • ¼ to cup fresh mint leaves, finely chopped
  • Juice of 2 limes (about 3 tablespoons)
  • Zest of 1 lime
  • 2 tablespoons extra virgin olive oil
  • 1 teaspoon honey or agave nectar (optional)
  • Pinch of salt, to taste
  • Pinch of freshly ground black pepper (optional)

Instructions

  1. Cut watermelon into manageable sections, remove rind, and cube into roughly 1-inch pieces (about 4 cups). Place in a large mixing bowl.
  2. Rinse and pat dry fresh mint leaves, remove from stems, and finely chop about ¼ cup.
  3. In a small bowl, whisk together lime juice, lime zest, extra virgin olive oil, honey or agave nectar, salt, and black pepper. Adjust sweetness or tartness to taste.
  4. Pour dressing over watermelon cubes and gently toss to coat evenly without mashing the watermelon.
  5. Sprinkle crumbled feta cheese and chopped mint over the dressed watermelon and gently fold to combine.
  6. Let the salad sit for about 5 minutes at room temperature to allow flavors to meld. Toss gently before serving.

Notes

Soak feta in cold water for 10 minutes to reduce saltiness if desired. Prepare dressing ahead to let flavors marry. Use a sharp knife to avoid squishing watermelon. Toss salad just before serving to keep watermelon crisp. Refrigerate leftovers up to 24 hours and drain excess juice before serving again.
