  • 1 large seedless watermelon, sliced into 1-inch thick rounds
  • 8 ounces (225 g) cream cheese, softened to room temperature
  • 2 tablespoons (30 ml) honey
  • 1 teaspoon (5 ml) vanilla extract
  • 1.5 cups (225 g) mixed berries (blueberries, sliced strawberries, raspberries, blackberries)
  • Fresh mint leaves, a handful, roughly chopped or whole (optional)
  • Zest of 1 lime (optional)

Instructions

  1. Slice the watermelon by cutting off the ends so it sits flat on the board. Slice crosswise into 1-inch (2.5 cm) thick rounds. Cut each round into 6-8 triangular pizza slices depending on size.
  2. In a mixing bowl, beat the softened cream cheese with an electric mixer or whisk until smooth and fluffy, about 2 minutes. Add honey and vanilla extract, then mix until fully combined and silky.
  3. Spread about 2 tablespoons (30 g) of the cream cheese mixture evenly over each watermelon slice.
  4. Scatter the mixed berries generously over the cream cheese layer, pressing lightly so they stick without crushing the fruit.
  5. If using, sprinkle chopped mint leaves and lime zest over the top. Arrange the watermelon fruit pizzas on a serving platter and serve immediately or chill up to 30 minutes before serving.
