A refreshing summer smoothie blending icy watermelon chunks, zesty lime, and cooling mint for a light, vibrant, and addictive drink perfect for hot days.

  • 4 cups diced seedless fresh watermelon (about 600 grams)
  • 1015 fresh mint leaves
  • Juice of 1 large lime (about 2 tablespoons or 30 ml)
  • 12 tablespoons honey or agave syrup (optional)
  • 2 cups ice cubes (about 480 ml)
  • 1/2 cup cold water (120 ml)

Instructions

  1. Cut about 4 cups of seedless watermelon into cubes, ensuring pieces are small enough to blend easily but still juicy.
  2. Rinse 10-15 fresh mint leaves gently and pat dry.
  3. Roll the lime on the counter, cut in half, and squeeze out about 2 tablespoons (30 ml) of fresh juice.
  4. Add watermelon cubes, mint leaves, lime juice, honey or agave (if using), ice cubes, and cold water into a high-speed blender.
  5. Blend on high for about 60 seconds or until smooth and slushy, with an icy but drinkable texture.
  6. Taste and adjust sweetness by adding more honey or agave if too tart; add a splash of cold water if too thick or more ice cubes if too thin, blending again as needed.
  7. Serve immediately in chilled glasses, garnished with a mint sprig or lime wheel.

Notes

Use ripe watermelon for best flavor. Avoid over-blending to prevent melting ice and watering down the drink. Add mint just before blending to avoid bitterness. Chill glasses before serving for extra refreshment. You can freeze watermelon cubes ahead to reduce ice needed. For an adult version, add a splash of white rum or tequila sparingly.
