  • 1 tablespoon honey or maple syrup (optional)
  • A handful of fresh mint leaves, roughly chopped or whole
  • Zest or juice from half a lime (optional)
  • Chia seeds or crushed nuts (optional, e.g., sliced almonds, pistachios)

Instructions

  1. Slice a round, seedless watermelon about 1 to 1.5 inches thick. Keep the slice as round and even as possible and place it on a cutting board.
  2. Spread about 1 cup (240 ml) of thick Greek yogurt evenly over the top of the watermelon slice using a spoon or offset spatula, covering the entire surface without dripping over the edges.
  3. Rinse mixed berries gently under cold water and pat dry. Slice larger strawberries into halves or quarters. Optionally, toss berries in a small bowl with a teaspoon of honey and a bit of lime zest or juice.
  4. Arrange the berries artfully on top of the yogurt layer, covering it generously.
