  • 1 ½ teaspoons pumpkin pie spice (or 1 tsp cinnamon, ¼ tsp nutmeg, ¼ tsp ginger, pinch cloves)
  • ½ teaspoon salt
  • ¼ cup milk (dairy or plant-based, e.g., oat milk or almond milk)
  • ½ cup dark chocolate chips (optional)
  • ¼ cup chopped pecans or walnuts (optional)
  • 2 tablespoons pumpkin seeds (optional, for topping)

Instructions

  1. Preheat oven to 375°F (190°C). Line a 12-cup muffin tin with liners.
  2. In a large bowl, whisk together pumpkin puree, honey, eggs, melted coconut oil, and vanilla extract until smooth.
  3. In a separate medium bowl, whisk together oats, whole wheat flour, baking powder, baking soda, pumpkin pie spice, and salt.
  4. Pour dry ingredients into wet ingredients. Add milk. Gently fold with a rubber spatula until just combined (a few streaks of flour are okay). If using, fold in chocolate chips or nuts.
  5. Divide batter evenly among muffin cups, filling each about ¾ full.
