A vibrant, no-cook lunch bento box packed with creamy hummus, crunchy vegetables, salty feta, and fresh fruit. Perfect for work, school, or picnics, this meal is quick to assemble and keeps you full without a microwave.

Ingredients

Scale
  • 1 cup hummus
  • 1 cup cherry tomatoes, halved
  • 1 medium English cucumber, sliced into rounds or half-moons
  • 1 each red, yellow, and orange bell peppers, sliced into strips
  • 2 medium carrots, cut into sticks or ribbons
  • 1 cup snap peas or snow peas
  • ½ cup Kalamata olives, pitted
  • ½ cup feta cheese, crumbled (optional)
  • 1 cup pita chips or crackers
  • 1 cup fresh fruit (grapes, berries, or apple slices) (optional)
  • 1 tablespoon lemon juice
  • Salt and black pepper to taste

Instructions

  1. Prep the Hummus Base (2 minutes): If your hummus is thick from the fridge, give it a good stir. For extra creaminess, whisk in a teaspoon of olive oil or a squeeze of lemon juice. Spoon it into a small, leak-proof container or a corner of your bento box.
  2. Wash and Dry All Produce (3 minutes): Wash all vegetables and fruit, then pat them completely dry with a clean kitchen towel or paper towels.
  3. Slice the Vegetables (5 minutes): Cut bell peppers into ½-inch thick strips. Slice cucumber into rounds or half-moons. Halve cherry tomatoes. Cut carrots into sticks or use a peeler to make ribbons. Trim ends off snap peas.
  4. Assemble the Base Veggies (3 minutes): In your bento box, arrange cucumber slices, bell pepper strips, carrot sticks, and snap peas. Group by color for visual effect.
  5. Add the Accents (2 minutes): Tuck halved cherry tomatoes in a corner. Add Kalamata olives. If using, sprinkle crumbled feta over cucumber and tomatoes.
  6. Add the Fruit and Crunch (2 minutes): Place fresh fruit in one compartment. Fill the last spot with pita chips or crackers.
  7. Final Touch (1 minute): Just before closing the lid, give the veggies a tiny squeeze of fresh lemon juice and a pinch of salt and pepper.
  8. Chill (optional but recommended): Refrigerate the assembled box. The flavors meld slightly, and the veggies stay crisp.

Notes

Dry vegetables thoroughly to prevent sogginess. Keep hummus and crackers separate from wetter veggies like tomatoes. For best crunch, slice veggies the day you plan to eat them. Season in layers—a tiny pinch of salt on cucumber slices makes a difference. Lemon juice brightens flavors. Store in refrigerator for up to 3 days; add tomatoes and lemon juice just before serving to avoid sogginess. Do not freeze.
