  • 1 cup (200 grams) granulated sugar
  • 2 tablespoons (30 ml) fresh lemon juice (about 1 lemon)
  • 1/4 cup (60 ml) water
  • 1 whole vanilla bean, split and seeds scraped
  • Vanilla bean pod (reserved after scraping seeds)
  • Optional: 1 teaspoon lemon zest

Instructions

  1. Rinse 2 pounds (900 g) of fresh figs under cold water. Remove stems, then chop the figs into quarters. Adjust piece size based on texture preference. (Approx. 10 minutes)
  2. Using a sharp knife, split 1 vanilla bean lengthwise. Scrape out the tiny seeds with the back of the knife. Set seeds aside and keep the pod for cooking. (Approx. 5 minutes)
  3. In a heavy-bottomed pot, add chopped figs, 1 cup (200 g) granulated sugar, 2 tablespoons (30 ml) fresh lemon juice, 1/4 cup (60 ml) water, vanilla seeds, and the reserved vanilla pod. Stir gently to combine. (Approx. 5 minutes)
  4. Place the pot over medium heat. Stir occasionally as the sugar dissolves and the figs start to release juice. Once the mixture reaches a gentle boil, reduce heat to low. Let it simmer uncovered, stirring frequently to prevent sticking or burning. (Approx. 30-35 minutes)
  5. Test the jam by dropping a small spoonful on a chilled plate. Let it cool for a minute, then push it with your finger. If it wrinkles and doesn’t flood back, it’s done. If not, continue simmering and testing every 5 minutes. Remove the vanilla pod before storing. (Approx. 5 minutes)
  6. Transfer the jam to a clean jar or container. Let it cool completely before sealing. Refrigerate and consume within 2-3 weeks or freeze for longer storage. (Approx. 15 minutes cooling)
