  • 810 medium ripe fresh figs, halved
  • 4 oz (115g) soft goat cheese
  • 2 tablespoons honey
  • 1 tablespoon balsamic vinegar
  • 1 tablespoon extra virgin olive oil
  • 1 teaspoon fresh thyme leaves (optional)
  • Pinch of salt
  • Freshly ground black pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Rinse the figs gently under cool water and pat dry. Slice them in half lengthwise.
  3. In a small bowl, whisk together honey, balsamic vinegar, and olive oil until smooth and glossy.
  4. Line a baking sheet with parchment paper. Place fig halves cut-side up, spacing them evenly.
  5. Drizzle the honey balsamic glaze over each fig, coating the flesh well.
  6. Roast the figs in the oven for 10-12 minutes until soft but not collapsed and glaze bubbles slightly.
  7. Remove figs and let cool for 5 minutes to thicken the glaze.
  8. Spoon or crumble goat cheese over the warm figs. Sprinkle fresh thyme leaves, black pepper, and a pinch of salt if using.
  9. Serve immediately warm or at room temperature.

Notes

Do not overcrowd the baking sheet to allow even roasting. Use high-quality balsamic vinegar for best flavor. Adjust roasting time if figs are very juicy to avoid sogginess. Add goat cheese after roasting to maintain creaminess. Variations include adding toasted nuts, swapping herbs, or using vegan cheese alternatives.
