  • 12 medium fresh jalapeños, washed and halved lengthwise, seeds removed (keep some seeds for extra heat)
  • 8 ounces cream cheese, softened to room temperature
  • 1 cup shredded cheddar cheese (about 110 g), sharp or mild
  • 12 slices thin-cut bacon
  • 2 tablespoons honey
  • 2 tablespoons sriracha sauce
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon smoked paprika
  • Salt and black pepper to taste
  • Optional garnish: chopped fresh cilantro or green onions

Instructions

  1. Preheat oven to 400°F (200°C). Line a baking sheet with aluminum foil and place a wire rack on top if available.
  2. Slice each jalapeño in half lengthwise and scoop out seeds and membranes. Leave some seeds if more heat is desired.
  3. In a mixing bowl, combine softened cream cheese, shredded cheddar cheese, garlic powder, smoked paprika, salt, and black pepper. Mix until smooth.
  4. Fill each jalapeño half generously with the cheese mixture, leveling with the edges.
  5. Wrap each stuffed jalapeño half with a slice of bacon. Use half a slice for smaller peppers if needed. Secure with a toothpick if necessary.
  6. Arrange the wrapped poppers on the wire rack or directly on the baking sheet, spaced apart for air circulation.
  7. In a small bowl, whisk together honey and sriracha sauce to make the glaze.
  8. Bake poppers for 15 minutes, then remove from oven and brush glaze generously over each popper.
  9. Return to oven and bake for another 10-12 minutes until bacon is crispy and glaze is caramelized but not burnt.
  10. Remove from oven and let cool for 5 minutes before serving. Garnish with chopped cilantro or green onions if desired.

Use a wire rack to ensure bacon crisps evenly and avoid sogginess. Brush glaze twice—once midway and once at the end—to build sticky layers without burning.
