  • 3040 pretzel sticks (thin, straight ones like Snyder’s of Hanover)
  • 1 tablespoon coconut oil or butter (optional, for shine)
  • Candy eyes (small white and black)
  • 1/4 cup mini chocolate chips
  • 1 tablespoon sprinkles (optional, Halloween mix)
  • 1/4 cup chopped peanuts or crushed graham crackers (optional)

Instructions

  1. Wash apples thoroughly. Using an apple corer or sharp knife, remove the core from each apple. Slice apples crosswise into rings about 1/2 inch thick (about 4-5 rings per apple). If prepping ahead, toss rings in lemon juice and a splash of water to prevent browning.
  2. Take each apple ring and gently push 4-5 pretzel sticks into the bottom edge, spacing them evenly. Push them in about halfway so they are secure. Place rings on a parchment-lined baking sheet.
  3. Unwrap caramel candies and place in a microwave-safe bowl. Add heavy cream (or milk) and coconut oil (if using). Microwave in 30-second intervals, stirring well between each, until caramel is completely smooth and glossy (about 2-3 minutes total).
  4. Working one at a time, hold each apple ring by the pretzel legs and dip into melted caramel. Use a spoon to help coat the top and sides if needed. Let excess caramel drip off for a few seconds before placing back on parchment paper.
  5. While caramel is still warm and sticky, press two candy eyes onto the top of each ring to make a face. Use a tiny dab of caramel to attach mini chocolate chips for a mouth or nose. If using sprinkles or chopped nuts, sprinkle them on now before caramel sets.
  6. Place baking sheet in the refrigerator for 15-20 minutes to allow caramel to fully set. Bites should be firm to the touch but still slightly chewy.
  7. Serve cold or at room temperature. Arrange on a platter with pretzel legs facing out for maximum spooky effect.
