A tender and moist sheet cake bursting with fresh blueberries and a tangy buttermilk crumb, perfect for any occasion and easy to make with simple ingredients.

  • 2 ½ cups (320 g) all-purpose flour
  • 1 tsp baking soda
  • ½ tsp salt
  • ½ cup (113 g) unsalted butter, softened
  • 1 ¾ cups (350 g) granulated sugar
  • 3 large eggs, room temperature
  • 1 cup (240 ml) buttermilk
  • 2 tsp vanilla extract
  • 2 cups (300 g) fresh or frozen blueberries
  • Optional: zest of 1 lemon

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour a 9×13-inch pan or line it with parchment paper.
  2. In a large bowl, sift together the flour, baking soda, and salt.
  3. In another bowl, beat the softened butter and sugar until pale and fluffy, about 3–4 minutes.
  4. Beat in the eggs one at a time, mixing well after each addition.
  5. Alternately add the dry ingredients and buttermilk to the butter mixture, starting and ending with the dry ingredients. Mix gently at low speed after each addition.
  6. Stir in the vanilla extract.
  7. Gently fold in the blueberries with a spatula, taking care not to overmix.
  8. Pour the batter evenly into the prepared pan.
  9. Bake for 40–45 minutes, starting to check at 38 minutes with a toothpick. The toothpick should come out with a few moist crumbs but no wet batter.
  10. If edges brown too fast, tent the cake loosely with foil halfway through baking.
  11. Cool the cake in the pan on a wire rack for at least 20 minutes before slicing.

Notes

Use softened, not melted butter for best texture. Fold blueberries gently to keep them mostly whole and prevent purple streaks. If using frozen blueberries, toss them lightly in flour before folding in to prevent sinking. Tent with foil if edges brown too quickly. The batter is thinner than typical cake batter but bakes into a moist crumb.
