Instructions

  1. Preheat oven to 325°F (163°C). Line a 9×9-inch baking pan with two strips of parchment paper that cross each other, leaving about 2 inches of overhang on each side. Lightly spray with nonstick spray.
  2. Make the crust: In a food processor or zip-top bag, crush chocolate graham crackers into fine crumbs. Transfer to a medium bowl and whisk in black cocoa powder, sugar, and salt. Pour in melted butter and stir with a fork until evenly moistened (like wet sand). Press firmly into the bottom of the prepared pan using a flat measuring cup.   5. Make spiderweb topping: In a small bowl, stir together ¼ cup sour cream, 1 tablespoon sugar, and 1 teaspoon milk until smooth. Drizzle in 3-4 concentric circles over the cheesecake batter. Use a toothpick or skewer to drag lines from the center outward (like spokes), then drag lines from the edge back toward the center between each spoke to create a web pattern.
  6. Bake for 35-40 minutes. Edges should be set and slightly puffed, center should jiggle slightly. Turn off oven, crack door open, and let bars sit in cooling oven for 15 minutes. Transfer to a wire rack and cool completely at room temperature, about 1 hour.
  7. Cover pan with plastic wrap and refrigerate for at least 4 hours, preferably overnight.
  8. Lift bars out using parchment sling. Place on cutting board and slice into 16 squares with a sharp knife, wiping clean between cuts.
