A quick and easy recipe for rich, molten chocolate lava cakes designed to serve two, perfect for romantic dinners or intimate indulgence.

Ingredients

Scale
  • 6 tablespoons (85 grams) unsalted butter, plus extra for greasing ramekins
  • 4 ounces (115 grams) bittersweet or semisweet chocolate, chopped or chocolate chips
  • 1/3 cup (65 grams) granulated sugar
  • 2 large eggs, room temperature
  • 1/4 cup (30 grams) all-purpose flour, sifted (can substitute almond flour for gluten-free)
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon espresso powder (optional)
  • Pinch of salt
  • Optional garnishes: powdered sugar, fresh raspberries, whipped cream, vanilla ice cream

Instructions

  1. Preheat oven to 425°F (220°C). Butter the ramekins thoroughly and lightly dust with cocoa powder or flour to prevent sticking.
  2. Melt the butter and chocolate together in a double boiler or microwave-safe bowl until smooth and glossy. Let cool slightly but do not harden.
  3. In a large bowl, whisk eggs and granulated sugar until pale, thick, and frothy (3-4 minutes by hand or 2 minutes with mixer).
  4. Stir in vanilla extract, espresso powder (if using), and a pinch of salt into the egg mixture.
  5. Slowly pour the cooled chocolate-butter mixture into the egg mixture while stirring gently to avoid scrambling eggs.
  6. Sift flour over the batter and gently fold in using a spatula until just combined. Do not overmix.
  7. Cover the batter and refrigerate for at least 30 minutes to chill.
  8. Divide the batter evenly between the two prepared ramekins, filling no more than 3/4 full.
  9. Place ramekins on a baking sheet and bake for 12-14 minutes until edges are set but centers remain slightly jiggly.
  10. Let cakes cool for 1-2 minutes, then carefully invert onto serving plates. Run a knife around edges if needed.
  11. Serve immediately with optional garnishes like powdered sugar, vanilla ice cream, fresh berries, or raspberry sauce.

Notes

Chilling the batter before baking is essential to achieve the perfect molten center. Watch baking time closely starting at 12 minutes to avoid overbaking. Use quality bittersweet chocolate with at least 60% cacao for best flavor. Butter and dust ramekins well to prevent sticking. Batter can be prepared and refrigerated in ramekins up to 24 hours before baking; add 1-2 minutes to baking time if baking cold.
