Perfect Grown-Up Grilled Cheese with Brie Apple Honey Drizzle

A simple yet indulgent grilled cheese sandwich featuring creamy brie, crisp apple slices, and a sweet honey drizzle, perfect for cozy nights or quick lunches.

Ingredients

  • 2 slices rustic sourdough or country white bread
  • 3 to 4 ounces brie cheese, thinly sliced
  • 1 medium apple, thinly sliced (Granny Smith, Honeycrisp, or Fuji)
  • 1 tablespoon honey (raw or wildflower)
  • 1 tablespoon softened butter
  • Optional: pinch of freshly ground black pepper or sprinkle of cinnamon

Instructions

  1. Thinly slice the brie and apple (about 1/8-inch thick). Set aside.
  2. Spread softened butter evenly on one side of each bread slice (this will be the outside of the sandwich).
  3. Place one slice of bread, buttered side down, on a plate or cutting board.
  4. Layer the brie evenly over the bread, then arrange apple slices on top in a single layer.
  5. Drizzle about half the honey over the apples and optionally sprinkle black pepper or cinnamon.
  6. Top with the second slice of bread, buttered side up.
  7. Heat a skillet over medium-low heat for about 3 minutes.
  8. Place the sandwich in the skillet and cook for 3-4 minutes until golden brown, pressing gently with a spatula.
  9. Flip the sandwich and cook the other side for another 3-4 minutes until brie is melted and bread toasted.
  10. Remove sandwich from pan and drizzle remaining honey over the top.
  11. Let rest for a minute, then slice diagonally and serve.

Notes

Cook on medium-low heat to melt brie slowly without burning bread. Cover pan briefly if brie isn’t melting fast enough. Use softened butter spread thinly for best crust. Thinly slice apple and brie for better melting and texture. Drizzle honey just before serving to keep flavor bright.
