Ingredients

  • All-purpose flour – 1 ½ cups (180g)
  • Baking powder – 1 tablespoon
  • Granulated sugar – 2 tablespoons
  • Salt – ¼ teaspoon
  • Milk – 1 ¼ cups (300ml), whole or 2%
  • Large eggs – 2, room temperature
  • Unsalted butter – 4 tablespoons (60g), melted and cooled
  • Pure vanilla extract – 1 teaspoon
  • Fresh strawberries, sliced
  • Blueberries
  • Bananas, sliced
  • Maple syrup or honey
  • Whipped cream or Greek yogurt (or coconut yogurt for dairy-free)
  • Chopped nuts like pecans or walnuts (optional)
  • Chilled sparkling wine or champagne – 1 bottle (or sparkling water for mocktail)
  • Fresh orange juice – 2 cups (480ml)
  • Fresh grapefruit juice – 1 cup (240ml)
  • Peach nectar or puree – 1 cup (240ml)
  • Fresh fruit slices for garnish: orange wheels, raspberries, mint sprigs
  • Optional liqueurs: Grand Marnier or Cointreau

Instructions

  1. Mix the dry ingredients: In a medium bowl, whisk together 1 ½ cups all-purpose flour, 1 tablespoon baking powder, 2 tablespoons sugar, and ¼ teaspoon salt.
  2. Combine the wet ingredients: In a separate bowl, beat 2 large eggs until light and frothy. Add 1 ¼ cups milk, 4 tablespoons melted unsalted butter, and 1 teaspoon pure vanilla extract. Whisk until smooth.
  3. Make the batter: Pour the wet ingredients into the dry mix. Gently fold together using a spatula until just combined. Let the batter rest while you preheat the waffle maker.
  4. Preheat and grease the mini waffle maker with non-stick spray or melted butter.
  5. Cook the waffles: Spoon about 2 tablespoons of batter onto each waffle cavity. Close the lid and cook for 2 to 3 minutes until golden brown and crisp.
  6. Keep waffles warm on a wire rack or in a warm oven at 200°F (90°C) to maintain crispness.

Notes

Do not overmix the batter to keep waffles tender. Preheat the waffle maker fully and grease well to prevent sticking. Keep waffles warm on a wire rack to maintain crispness.
