Ingredients

Scale
  • 1 sheet puff pastry (thawed but still cold)
  • 8 oz cream cheese, softened (full fat recommended)
  • 1/4 cup granulated sugar
  • 1 teaspoon vanilla extract
  • Zest of 1 lemon
  • 2 ripe peaches, peeled and thinly sliced (about 1 cup)
  • 1 tablespoon brown sugar
  • 1 teaspoon fresh lemon juice
  • 1/3 cup all-purpose flour
  • 1/4 cup sliced almonds, toasted lightly
  • 1/4 cup light brown sugar, packed
  • 3 tablespoons unsalted butter, cold and cubed
  • 1/2 teaspoon ground cinnamon (optional)
  • 1/2 cup powdered sugar (for glaze, optional)
  • 12 tablespoons milk or cream (for glaze, optional)
  • 1/4 teaspoon vanilla extract (for glaze, optional)

Instructions

  1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. In a medium bowl, beat cream cheese, granulated sugar, vanilla extract, and lemon zest until smooth and creamy. Set aside.
  3. In another bowl, combine flour, brown sugar, cinnamon, and toasted sliced almonds. Cut in cold cubed butter until mixture resembles coarse crumbs. Set aside.
  4. Peel and thinly slice peaches. Toss with brown sugar and lemon juice to glaze and prevent browning.
  5. Unfold puff pastry on a lightly floured surface. Trim edges to form a neat rectangle (~12×9 inches). Score a 1-inch border around edges without cutting through.
  6. Spread cream cheese filling evenly inside the scored border.
  7. Layer peach slices over the cream cheese, overlapping like shingles.
  8. Sprinkle almond streusel topping evenly over peaches.
  9. Bake for 20-25 minutes until puff pastry is golden and streusel is crisp. Watch closely to prevent burning.
  10. While baking, whisk powdered sugar, milk or cream, and vanilla extract to make glaze (optional).
  11. Remove danish from oven and cool on a rack for 10 minutes.
  12. Drizzle glaze over the danish if using.
  13. Slice into squares or rectangles and serve warm or at room temperature.

Notes

Keep puff pastry cold until baking to ensure best puff. Toast almonds for extra flavor. Pat peaches dry if very juicy to avoid soggy pastry. Tent with foil if browning too fast. Glaze is optional but adds a nice finish. Store leftovers refrigerated up to 3 days or freeze up to 2 months.
