  • 4 cups (600g) fresh black raspberries
  • 2 cups (400g) granulated sugar
  • 2 tablespoons fresh lemon juice
  • 1 tablespoon dried culinary lavender buds
  • 1/4 cup (60ml) water

Instructions

  1. Prepare the lavender infusion: In a small saucepan, combine 1/4 cup water and 1 tablespoon dried culinary lavender buds. Bring to a gentle boil, then reduce heat and simmer for 5 minutes. Remove from heat and let steep for 5 more minutes. Strain through a fine mesh sieve or cheesecloth to remove the buds. Set aside the infused water.
  2. Rinse 4 cups fresh black raspberries gently under cold water. Drain well and remove any stems or leaves. Place berries in a large heavy-bottomed saucepan or jam pot.
  3. Add 2 cups granulated sugar and 2 tablespoons fresh lemon juice to the pot with berries. Pour in the lavender-infused water.
  4. Heat the mixture over medium heat, stirring constantly to dissolve sugar. Once it starts to boil, reduce to medium-low and simmer gently, stirring frequently. Skim off any foam that forms on top. Cook for 20-25 minutes until the jam thickens and deepens in color. Test by placing a small spoonful on a chilled plate; if it wrinkles when pushed with your finger, it’s ready.
  5. Remove the pot from heat and let the jam cool for 5 minutes. Using a ladle and jar funnel if available, fill sterilized half-pint jars, leaving about 1/4 inch headspace. Wipe rims clean and seal tightly.
  6. Let jars cool completely at room temperature. Store unopened jars in a cool, dark place for up to 3 months. Once opened, refrigerate and consume within 3 weeks.

Notes

Use fresh black raspberries for best texture; frozen can be used if thawed and drained. Do not substitute culinary lavender with essential oils. Skim foam during cooking for clearer jam. Use lemon juice to help set the jam. Test jam set with chilled plate method. Store unopened jars in a cool, dark place up to 3 months; refrigerate after opening and consume within 3 weeks.
