A quick and easy shrimp scampi with angel hair pasta that delivers buttery, garlicky richness in just 15 minutes. Perfect for busy weeknights or impressing guests without stress.

Ingredients

Scale
  • 8 ounces angel hair pasta
  • 1 pound raw shrimp, peeled and deveined
  • 4 tablespoons unsalted butter
  • 2 tablespoons extra virgin olive oil
  • 4 cloves garlic, minced
  • ½ cup dry white wine or low-sodium chicken broth
  • Juice of one lemon
  • ¼ teaspoon red pepper flakes (optional)
  • 2 tablespoons fresh parsley, finely chopped
  • Salt and black pepper to taste

Instructions

  1. Bring a large pot of salted water to a rolling boil. Add angel hair pasta and cook 2-3 minutes until al dente. Set a timer to avoid overcooking.
  2. While pasta cooks, pat shrimp dry with paper towels and season lightly with salt and pepper.
  3. Heat butter and olive oil in a large skillet over medium heat. Add minced garlic and stir constantly for 30 seconds to 1 minute until fragrant, being careful not to burn.
  4. Add shrimp in a single layer and cook 1-2 minutes on one side until pink edges appear. Flip and cook another 1-2 minutes until shrimp are just cooked through.
  5. Pour in white wine or chicken broth, scraping up any bits from the pan. Let simmer about 2 minutes to reduce slightly.
  6. Drain pasta quickly, reserving about ¼ cup pasta water. Add pasta to skillet with shrimp and toss gently to coat.
  7. Add lemon juice, red pepper flakes, and a bit of reserved pasta water if a looser sauce is desired. Toss to combine evenly.
  8. Remove from heat and sprinkle chopped parsley over the top. Taste and adjust salt and pepper as needed.
  9. Serve immediately while warm and fragrant.

Notes

Use wild-caught shrimp if possible for better texture and flavor. To keep gluten-free, substitute angel hair pasta with gluten-free pasta or spiralized zucchini noodles. For dairy-free, replace butter with olive oil or vegan butter. Avoid overcooking shrimp to keep them tender. Reserve pasta water to loosen sauce if needed. Add grated Parmesan cheese before serving for extra richness if desired.
